Yirgacheffe washed coffee is a type of specialty coffee from the Yirgacheffe region in southern Ethiopia, famous for its bright, floral, and citrusy flavor profile.
The word “washed” (or “wet-processed”) means that after the coffee cherries are harvested, the beans are washed with water to remove the fruit before drying. This method produces a cleaner, crisper taste, highlighting delicate flavors like jasmine, lemon, bergamot, and tea-like notes.
Because of its high elevation (around 1,800–2,200 meters) and unique heirloom coffee varieties, Yirgacheffe washed coffee is considered one of the most iconic and sought-after coffees in the world.
